Æbleskiver & Gløgg

Æbleskiver Ingredients and Instructions:

  • 2 apples, peeled, cored, pared, and chopped into 1/2” pieces
  • 2 Tbsp. butter plus butter to grease aebleskiver pan
  • 2 tsp. cinnamon
  • 2 eggs
  • 1 Tbsp. sugar
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 1/2 cups buttermilk

1. Place the æbleskiver pan over mediun-high heat and bring up to heat.

2. In a separate pan, saute apple pieces with 2 tablespoons butter unti slightly softened, and sprinkle with cinnamon.

3. Separate egg whites from the yolks.

4. Beat the egg whites untill stiff peaks form.

5. Whisk together egg yolks and sugar until creamy.

6. Stir flour with baking powder, then gradually stir in the flour and the buttemilk, alternating between the two, with each time adding half a cup of each, into the egg micture.

7. Fold in egg whites into the mixture.

8. Spoon the mixture into the æbleskiver pan and cook 2 min on each side.

9. Sprinkle with powdered sugar, serve with gem of your preferance.

Gløgg Ingredients and Instructions:

  • 1 bottle of red wine
  • 0.5 Liter inexpensive brandy or vodka
  • 10 cardamom pods
  • 1 cinnamon stick (broken down)
  • 1/2 orange peel (dried or fresh)
  • Optional additions: 5 cloves, 1/2 cup raisins, 1/2 cup almonds

1. Heat up the wine, brandy, spices and fruit in a pot.

2. Be carefull not to boil it, but simmer on low heat for aprox. 45 minutes

3. Strain through a cloth to remove all spices and additions-

4. Serve with raisins and almonds.

*And remember you can buy them in the shops as well, already made :)
